Every region in our country has their own individuality when it comes to food, and while we are big time champions of regional cuisine, we’ve often wondered how great it would be to get an Amritsari kulcha in the same place as a Bengali mishti doi. The chefs at Courtyard by Marriott Gurgaon seemed to share that thought, which is why they came up with the Indian Culinary Week just in time for Republic Day. Think 8 chefs from 8 states cooking you the united food of India.
CHEF’S CORNER
The festival is a culinary celebration that starts today and is on till January 26th. Each of the 8 chefs – heads from different Marriott properties – will cook up signature dishes and pass on the tricks of their trade to the sous chefs at the Gurgaon outpost.
Chef Thirumal (Bengaluru) brings Tamil fare, Chef Deepak Rana (Mussoorie) will be showcasing Pahadi delicacies, while Chef Ranjit (Jaipur) is bringing his fiery Laal Maas to town. Then there’s Chef Uday Karmalkar (Mumbai) giving us a taste of his Konkani Chicken, even as Chef Mithun Mohanan (Kochi) fries up Banana Fritters and Chef Chiranjeet Mandal (Raipur) mans the desserts. The only female guiding this team – Chef Amrutha Valli fondly known as Chutney Amma from Hyderabad – will be introducing Telegu dishes to the city. Of course, home ground is looked after by Chef Amarjeet Singh (Gurgaon) who’s rustling up Butter Chicken and the likes.
FOOD ATTACK
The 6-day festival will be open only for dinner and the final day will see a brunch table. Expect a full-fledged menu designed by the master chefs with their favourite dishes on a single platter. Each day sees a new surprise with everything from the starters to the mains and desserts changing daily. We went in for a sneak peek and loved the rustic flavours of Rajasthani Ker Sangri, Paneer Mewari and Punchkutta Saag next to Jodhpuri Murgh, Degchi Gosht and Murgh Ka Mookul. While the Telegu side of the kitchen has dishes like Gongura Pappu, Kodi Kura, Gumgura Mamsam and more, the Pahadi magic from Aloo ki Tachwani, Jangli Suar Ka Meat, Gad ki Machhi and Mooli ki Tachwani with Amelda ki Chutney is not-to-be-missed. The flavours of Bengal are seen in the sweets corner or halwai section courtesy Malai Sandwich, Malai Chom Chom, Mango Rabri, Chana Toast and Chandakala.
