Pling - Pullman New Delhi Aerocity

A hotel bar is no longer considered the gold standard in hospitality, but Aerocity’s newest entrant might just change all that. Pullman’s farm to fork philosophy is already winning its kitchen praises and now the lounge bar is shaking things up as well. The lobby level location is deceptively elegant with clean lines, an island bar and sinkable sofa chairs too comfortable to get out of. With a name inspired by the sound of ice dropping in a glass of liquid, the signature concoctions (Rs 650 each) are potent and expertly mixed. Of these, the Amalia with white rum, orange marmalade, Earl Grey syrup and bitters is an excellent choice for balmy summer days; but it’s the Ananda Brew you should watch out for. With fresh masala chai from Assam, vodka, orange zest and egg white – it’s a nuanced and fragrant drink that is best sipped at leisure. In comparison, the Jack Rose – bourbon, orange liqueur, lime and cranberry juice – is a more robust combination of flavours soaked in sunset hues. If you aren’t a cocktail fan, the Vinoteca concept offers wines from across the globe, by the glass or bottle, at great prices through a constantly evolving menu paired with tapas. Or there’s a fully stocked range of every spirit one could ask for including some reasonably priced beers and fine Scotch. As far as bar eats go, besides the modernised chakna, there’s a list of delicious bite sized appetisers including juicy Lamb Cheese Sliders and delicious Jalapeno Chicken Tikka plated with precision. Service is attentive albeit a little slow, while the vibe is sometimes disrupted because of the open layout, but all that can be ignored since everything else is done right!
